DRIED FISH BLADDERS
Fish maw is the dried form of a fish air bladder. HongKong called it 花膠 and China called it 花胶. The dried fish bladder is a natural source of protein, rich in collagen, calcium, and phosphor. Because of its high nutritional content, fish bladders are regarded by the Chinese as a precious food, similar to abalones or shark’s fins.
There are many types of fish bladders. Our fish bladders are removed from the Atlantic Codfishes, cleaned and machine dryed, without bleaching or coloring.
Dried fish bladders can be cooked in many ways, stir-fried, braised or doubled boiled in soup, poached with abalones, sea cucumbers, chicken or pork. In recent years, the Chinese are using fish bladders to substitute for shark’s fin soup, which is one of the deluxe delicacies in a Chinese special banquet.
